6 Summer Salads


I still don't have summer weather in Germany, but back home in Charlotte, North Carolina, it's already in full swing. So I thought I'd make a compilation of my favorite summer salads! Light, crunchy and fresh simply translates to the perfect summer meal. The great thing about all these salads is that they will leave you full. While low on calories, they all are packed with protein, fiber and tons of vitamins and minerals so you can feel great about what you eat. When recipes are fast, delicious and healthy, you know you've won!

This salad is fast and easy. Perfect for a weekday night when you are super tired. But not only that, it's also packed with protein and fiber from the chickpeas. 

Another quick and easy recipe made with cabbage, carrot, lime juice and peanuts that you just can't make once. When served on a bed of fresh lettuce, this dish screams summer!

This crisp salad is perfect for potlucks! The crunchy broccoli, salty bacon, sweet dried cranberries and toasted almonds will have you reaching for seconds. 

It seems like quinoa salads are everywhere this time of year! Protein-packed beans and quinoa turn this fresh veggie salad into a meal. The addition of mint and lime make it bright and summery. 

This cold noodle salad makes me feel like I just ordered the world's most delious Asian takeout. But it's healthy for you!!! The dressing makes it shine: jalepenoes, soy sauce, garlic, ginger, brown sugar, peanuts, Sriracha, rice wine vinegar. So much better than greasy takeout that leaves you bloated. 

This recipe is sooo fast to make. And it's worthy of serving to guests. The pink salmon, purple cabbage, green romaine and red bell pepper make this simple dish beautiful. The rosemary adds an unexpected and delicious note to the dish that will leave everyone impressed.
